Pasta salads are the perfect companion for every barbecue evening. They are quick to prepare, can be customized, and you can simply take the leftovers with you to work as meal prep. It tastes even better after chilling for one night! Our recipe is inspired by the classic pesto, but works completely without a mixer and without any perishable ingredients! We chose our BIO broccoli powder, but it works just as well with one of our other vegetable powders. Why not with spinach or kale? Or a mixture of several? You can also vary the other ingredients freely: black beans instead of chickpeas, fresh tomatoes, some corn, a few roasted pine nuts, and much more! Design the salad just the way you like it and send us your favorite variations as a comment. Have fun trying!

for 4 servings

Preparation

  1. Prepare the pasta according to package instructions. Drain the water and let cool.
  2. Mix brokkoli powder, lemon juice, olive oil, mustard and garlic powder with water or fond in a big bowl. Adjust texture by adding more liquid or brokkoli.
  3. Cut the veggies and tomatoes in smaller piesces.
  4. Add all the ingredients together and mix. Season to taste.
  5. Enjoy!
